Roast Vegetable Salad with Risoni

About the Recipe

Every time we make this recipe, everyone raves about it — it’s incredibly delicious and so easy to prepare.

Choose vegetables you enjoy eating. We always include beetroot, red onion, and capsicum as must-haves for flavour.

Ingredients

  • 3 Cups Vegetables of your liking

  • 1/2 Cup Risoni

  • Feta (as much as you desire

Preparation

Step 1


Select vegetables that you enjoy eating. Pumpkin, Kumera, Potato - we always include Beetroot, Red onion & Capsicum as a must have for flavour.


Step 2


Cut the vegetables up into bite size chunks and put into a deep dish.


Step 3


Drizzle Oil all over the top.

Sprinkle pepper & salt

Put into oven at 220 Celsius


Step 4


Whilst they are cooking, boil up 1/2 cup of Risoni and cut up as much feta as you desire, we like feta chunks but many prefer crumbed.


Step 5


Once the vegetables are cooked, remove them from the oven and place in a bowl.

Add the Risoni & Feta, toss together.


Step 6


Add some spinach leaves if you like for a bit of colour.

Drizzle lemon or lime juice or another dressing (a good chance to be creative)


Salad is ready to serve
