About the Recipe

If you’re looking for a delicious, easy, and quick meal to make, this recipe is for you! There’s nothing better than a light, fluffy scone to fill your tummy.

The Waiheke Scone is made with just four ingredients and requires minimal cooking time — the secret is lemonade. We love making these on lazy days when we don’t feel like preparing a big lunch. The gentle smokiness from the Kiwi Outdoor Oven adds a subtle finish to each mouthful, creating a truly satisfying flavour.

Ingredients

  • 4 Cups Self-Raising Flour

  • 300ml Cream

  • 1 Can Lemonade

  • 1/2 tbsp Salt

Preparation

Step 1


Preheat oven to 220 Degrees. Cover a tray with baking paper or rub butter over it.



Step 2


Mix all the ingredients together to form a smooth dough, tip out onto a floured work bench.



Step 3


Form into a square and cut into scone shaped pieces. You can make them as small or as large as you like.



Step 4


Bake for 15-20 minutes until they start to get some colour, check the base of the scone, it should have a nice golden colour.



Step 5


Remove from oven and wrap in a tea towel or cool on a rack covered with a tea towel. Serve when ready with butter, jam and cream available.



Chef's tips


If you want light and fluffy scones, just mix until all the ingredients are together, be careful not to overmix.


If you are wanting a nice rounded shape, we used a cookie cutter -this also helped with same sized scones.


The mixture is quite wet and sticky, so when kneading the dough, you will need a fair amount of flour on your hands and the bench to help minimise the stick.


Make sure you buy the bigger bottle of cream, the leftover from the mixture is perfect for whipping!


Stay away from any 'diet' lemonade, full lemonade is what makes the recipe.
