About the Recipe
Beautiful racks of pork ribs, dry or dripping with sweet glaze bringing everyone back for seconds. A technique learned from the competition Barbecue B.O.I team, National Champions 2024.

Ingredients
1 Packet of Ribs
Your favourite rib rub
1 Tbsp Brown Sugar
Salt and Pepper
50g Butter cubed
Glaze of your choice
Preparation
Step 1
Take your rack of ribs and flip the meat side down.
There is a membrane on the bones, you will need to peel this off.
Find the corner of the membrane on the left and then just pull, it should just pull away with a little effort.
Turn the ribs now to meat side up, take your rub and give the ribs a good coat. Try to get the coat as even as possible.
Leave the ribs to sit for approximately 1 hour before cooking.
Step 2
Whilst you wait, light your Kiwi Outdoor Oven and settle the fire down to around 150 degrees Celsius.
Place the oven rack on the second setting (middle) and place your ribs on the rack meat side up. If you have a tray you can place this on the tile directly under the ribs to catch any dips of fat from the ribs.
Step 3
Leave the ribs in the oven for approx. 45 mins or until the bark is set. If you have a spritz bottle spritz the meat approx. every 10 to 15 mins.
Once the bark is set (changes colour) it is time to wrap the ribs. If you are going to serve them dry (no glaze) they can be left to cook for another 60 to 90 mins without wrapping, just continue to spritz so that they don't dry out.
Step 4
Wrapping for glazed ribs
Have a couple of sheets of tin foil on a counter with the 50 grams of butter cubed placed along the middle of the sheet (long ways).
Place the ribs bone side down on top of the butter.
Spread the brown sugar on top with an even coat and you can also drizzle some watered down glaze on them as well.
Fold the two tin foil ends in on top of the ribs then bring the two side together and fold them down on to the ribs nice and tight.
Place the ribs back in The Kiwi Outdoor Oven for another 60 to 90 mins depending on size of rack. You can probe the ribs from around 45 mins onward, if you feel no resistance then they are ready.
Step 5
Once the ribs are cooked, remove them from the oven. If wrapped, open them up for 5 mins prior to removing them from the oven to dry off.
Glaze them on the oven door and and them put them back in for a few minutes for heat.
Cut down the middle of each rib and enjoy.
