About the Recipe
Chicken wings are a great starter for any function, and this recipe is always a hit with guests.
It’s fun to add your own favourite spirit — something you enjoy or that complements the occasion. We change it depending on our mood; some days it’s rum, other days it’s bourbon.

Ingredients
800g Chicken Nibbles
1 tbsp Butter
2 tbsp grated onion
1/2 cup Spirit (Bourbon, Rum etc.)
3/4 cup Honey Maple Syrup
2 tbsp Tomato Paste
Sprinkle Salt
Black Pepper
1/4 tbsp Tabasco Sauce
Preparation
Step 1
Add the butter and onion to a saucepan and cook for 3–4 minutes, until the onion has softened.
Step 2
Add the remaining ingredients and stir to combine.
Step 3
Bring the mixture to a gentle simmer and cook for 5 minutes, stirring occasionally.
Step 4
Remove from the heat and allow to cool for 5–10 minutes.
Step 5
Place the chicken in a bowl and pour the slightly warm sauce over the top. Mix well, ensuring all the pieces are evenly coated.
Step 6
Cover the bowl with plastic wrap and refrigerate for at least 2 hours (overnight is even better if you have the time).
Step 7
Preheat the oven to approximately 180°C. Using tongs, arrange the wings on a rack set over a tray or directly onto a lined baking tray. Make sure the pieces are well coated. Reserve any leftover sauce for basting.
Step 8
Roast for 20 minutes, then turn the wings over and baste with more sauce if desired. Roast for a further 20 minutes, or until cooked through.
If using a probe, the internal temperature should reach 75°C.
Step 9
Remove from the oven and transfer to a serving plate. Garnish with spring onions or sesame seeds if desired.
Serve with paper towels for messy fingers, and place a bowl on the table for the bones — perfect for tossing into the fire afterwards.
