About the Recipe
Every Year we try a different Ham recipe and it has quickly become the highlight of our Christmas - What will the ham taste like this year?

Ingredients
Christmas Ham
2-3 tbsp Brown Sugar
4-5 tbsp AkeAke Port (or your taste)
x2 Ainse Star
Preparation
Step 1
Mix the above ingredients together and simmer on low heat for 1–2 minutes to release the star anise flavour.
Do not simmer for too long, as star anise has a strong flavour.
Step 2
Remove the rind from the ham.
Using a sharp knife, score the fat in a criss-cross pattern.
Step 3
Brush the entire ham with the glaze, using about half of the mixture.
Place the ham into a roasting dish.
Step 4
Pour a bottle of your favourite cider into the base of the roasting dish.
Cover and place in the oven.
Step 5
Cook for 4–5 hours on low heat.
Baste after 2–2½ hours.
For the final 30 minutes, remove the cover and baste again.
Step 6
Remove from the oven and allow to rest for 30 minutes before slicing and serving.
