The Kiwi Outdoor 2021 Special Christmas Ham

Every year we try a different Ham recipe and it has quickly become the highlight of Christmas - what will the Ham taste like this year?


Sourcing your Ham

A bonus of having farming siblings is that often we can purchase a home kill ham for the Christmas table, unfortunately, this wasn't the case this year.

So the next best this is a NZ grown ham sourced from Burton's Butchery Paeroa.


Ham Glaze

2-3T Brown Sugar

4-5T AkeAke Port (https://www.akeakevineyard.co.nz/product-page/ruby-port)

2 x Ainse Star


Mix the above ingredients together and on a low heat simmer for about 1-2 mins to release the stars into the flavour. Don't leave it too long, the Stars have a strong flavour.


Remove the rind from the ham

Using a sharp knife, put criss-cross slices into the fat

Brush the whole ham with the glaze (using about half of the glaze)

Place into a roasting dish

Add a bottle of your favourite cider to the base of the roasting dish

Cover and put in the oven



Cook for 4-5 hours at a low heat basting at 2 - 2 1/2 hours

In the final 1/2 hour remove the covering and baste again


Remove from oven, stand for 30 mins before slicing and serving.
