Smoky Courgette Bake

We have been introduced to a family recipe which was created by the Nan and passed down through the grandchildren, it is simple and tasty that is the perfect side dish or meal. We love family recipes, they are usually something that was made randomly one night and enjoyed by everyone leading to constant remake or request. Traditionally cooked in a conventional oven, but once we decided to give it a run through the Kiwi Outdoor Oven. enhancing the flavours and adding in a nice smoky after taste, it has become one of our favourites.

The main ingredients you will need is:

  • 2 courgettes sliced thin, cut in half

  • 2 tbsp of butter

  • 2-3 tsp's of crushed garlic

  • 1 brown onion sliced thin, cut in half

  • Grated cheese (how much is to your liking)

  • Sprinkle of mixed herbs, salt & pepper

To create the Courgette bake, follow the next easy steps:

  1. Cut the courgettes and onion, mix together in a bowl and place in a large baking dish

  2. Melt the butter and mix in the garlic, herbs, salt and pepper. Then pour this mixture over the courgette and onion slices

  3. Top with grated cheese (we like parmesan or tasty the best)

  4. Bake in the Kiwi Outdoor Oven till courgettes are soft and the cheese is melted - roughly 15-20 minutes at 180 degrees.
